On lui doit notamment de nombreux westerns, dont Winchester '73 (1950) et Je suis un aventurier (1954), tous deux réalisés par Anthony Mann et avec James Stewart. Parmi ses autres films notables, citons L'Or du Hollandais de Delmer Daves (1958, avec Alan Ladd) et Les Révoltés du Bounty de Lewis Milestone (version de 1962, avec Marlon Brando et Trevor Howard).
Aaron Rosenberg est également producteur de télévision, sur quatre téléfilms, entre 1968 et 1974, année où il se retire. Mais surtout, il est producteur exécutif de la série-western Daniel Boone (158 épisodes, soit la quasi-intégralité, de 1964 à 1970), avec Fess Parker dans le rôle-titre.

Au cinéma, Aaron Rosenberg débute comme assistant-réalisateur en 1935 et travaille à ce titre jusqu'en 1948. Entre autres, il assiste les réalisateurs Allan Dwan (cinq films, dont Suez en 1938), Fritz Lang (Le Retour de Frank James en 1940), Anatole Litvak (deux films, dont Âmes rebelles en 1942), et enfin George Marshall (Le Sang de la terre en 1948, son dernier film comme assistant-réalisateur).Il devient producteur de cinéma en 1948 et, principalement au sein d'Universal Pictures, exerce cette fonction jusqu'en 1973 pour le grand écran. Claire (Hackett) is the abused wife of vicious schoolmaster Michael (Waterston), who takes great delight in belittling and emotionally abusing her both in public and in private. Michael is also openly carrying on an affair with one of the school's teachers, Vicky (Weld), whom he sometimes physically assaults. Having grown tired of his cruelty, the two women conspire to murder him and stage the act to look like an accident. Robert Bridgestone (Kerwin Mathews), a divorced father, takes his son, Richie, to the family mountain cabin. During a moonlight hike, the two are attacked in the darkness by a werewolf. During the struggle, the werewolf falls into a ravine and is impaled on a wooden fence, but not before biting Robert. Upon investigation, they find their attacker to be human. Unable to identify the body, the local sheriff concludes their attacker was a crazy drifter. Richie insists it was a werewolf but his father and the sheriff laugh it off as childish imagination.

American couple Mike and Janet Harper (Rod Taylor and Doris Day) move to England for Mike's work, his company which deals in wool textiles and wool fashions.
