He is originally from Baltimore, Maryland, but was raised in Montreal, Canada. He is a graduate of the Dawson College Theatre Program in Montreal and has been in several plays. He is best known as Arnaud DeFöhn from the SciFi channel's show Invisible Man.
He has appeared in the films Century Hotel, Boulevard, Suspicious River, The Sum of All Fears, Fight Club, Darkman III, Language of the Heart, Fall and The Curious Case of Benjamin Button. In 2010, Bissonnette played the assassin Pavel Tokarev in the eighth season of the television series 24.

On the morning of his thirty-seventh birthday, Michael Brown (Adam Scott) receives a telephone call from his estranged drug addicted brother Tobey (Joel Bissonnette). The two travel in an old BMW across Los Angeles in search of Tobey’s “reason for living”, which Michael believes is something/someone deeply personal while Tobey is actually looking for cheap drugs. At various stops, Michael phones his girlfriend, leaving messages professing his love and a desire to spend his birthday together. Tobey eventually informs Michael that his own ex-girlfriend called recently, and the two plan to get married as soon as possible. The brothers’ search leads them through a bizarre, beautiful land filled with surprising, comical characters to a very unexpected and magical destination, complete with Michael's girlfriend and Tobey's fiancée.

In 2005, elderly Daisy Fuller is on her deathbed in a New Orleans hospital; she asks her daughter, Caroline, to read aloud from the diary of Benjamin Button. From the reading, we learn that on the evening of November 11, 1918, a boy is born with the appearance and physical maladies of an elderly man. The baby's mother died after giving birth, and the father, Thomas Button, abandons the infant on the porch of a nursing home. Queenie and Mr. "Tizzy" Weathers, workers at the nursing home, find the baby, and Queenie decides to care of him as her own.

In 2002, a Syrian scrap collector uncovers a large unexploded bomb buried in a field within the Golan Heights, and sells it to a South African arms dealer named Olson (Feore). Olson recognizes it as an Israeli nuclear weapon that was lost when the A-4 Skyhawk carrying it was shot down during the 1973 Yom Kippur War. He later sells it to a secretive far-right cabal seeking to impose a white supremacist world order, led by Austrian billionaire and neo-Nazi Richard Dressler (Bates). Dressler's aim is to transform Europe into a united fascist superstate. He intends to start a nuclear war between the United States and Russia that will devastate them both.

Leila Murray works as a receptionist in a motel. She begins to offer sexual services to customers in exchange for money. The unnamed narrator (Edward Norton) is a traveling automobile company employee who suffers from insomnia. One night he visits a support group for testicular cancer victims, where they assume that he too is a victim, and he spontaneously weeps into the nurturing arms of another man, finding a "freedom" that euphorically relieves his insomnia. He becomes addicted to participating in support groups of various kinds, always allowing the groups to assume that he suffers what they do. Peyton Westlake (Arnold Vosloo), still searching for the key to creating a permanent liquid-skin formula to repair his burned face and hands, is approached by Dr. Bridget Thorne (Darlanne Fluegel), one of the physicians who saved Westlake's life following his brutal attack at the hands of Robert G. Durant. Thorne claims that she wants to help Westlake discover the key to his liquid skin, and also repair his nervous system, allowing him to regain some of his sensory loss. Using a laboratory set-up Thorne has, Westlake is finally able to devise a small amount of permanent liquid skin, which does not break down in sunlight as his other samples have.

The film is about a woman named Jennefer (played by Kari Wührer) who runs from her abusive husband, gives her baby up for adoption and ends up on the streets during a grim and cold winter in Toronto. She's taken in by a prostitute named Ola (played by Rae Dawn Chong). Ola sees her pimp Hassan (Lou Diamond Phillips) murder another prostitute but refuses to testify against him, knowing that Hassan has associates that will kill her. A police officer named McClaren (Lance Henriksen) attempts to interrogate her and she is deported. Jennefer then becomes a prostitute under Hassan and later confronts her husband who tracks her down with the intent on killing her.
