Add to a movie listLos Enchiladas! is a 1999 film written, directed by and starring stand-up comedian Mitch Hedberg. The film is loosely based on his life growing up in Minnesota and his experience working in restaurants. It parodies a chain Mexican restaurant in a suburb of St. Paul, Minnesota, on the day before Cinco de Mayo (the busiest day of the year for Mexican restaurants). The storyline follows an ensemble cast of absurd characters that work in and visit the restaurant throughout the course of one day.
The cast is composed of many of Mitch's comedian friends and rounded out by local Minnesota actors.
Three different local restaurants were used to portray the film's restaurant; one for the dining room scenes, a second for the kitchen scenes, and a third for the outside of the restaurant, which was a Chi-Chi's that Mitch actually worked at many years before and was the main inspiration for the ridiculously inauthentic Los Enchiladas.
"Los Enchiladas!" premiered at the 1999 Sundance Film Festival, and has only been shown publicly a handful of times since, at comedy festivals and tributes to the deceased director, such as the one at the Paramount Theatre in Anderson, Indiana on August 12, 2010. It has never been publicly released for purchase or download, although Mitch's fanbase has expressed a continuing desire for the film to become available.
In April 2011, a unofficial workprint copy was released on various torrent & p2p sites. This release appears to have been specifically opposed by Hedberg's widow, Lynn Shawcroft, who is working towards a wider release of the film.

Upon finding a wagon under attack by bandits, two black bounty hunters, Boss and Amos (Fred Williamson and D'Urville Martin, respectively) intervene and save Clara Mae, a black woman (Carmen Hayworth). Upon inspecting the bodies, the bounty hunters find several have rewards to their name and one holds a letter from the mayor of the nearby town San Miguel inviting him to become sheriff on the recommendation of fugitive Jed Clayton (William Smith). The pair take Clara Mae to safety in San Miguel and meet Mayor Griffin (R.G. Armstrong). Knowing that there is no sheriff and holding proof that the mayor intended to give it to a gang member, Boss is able to outsmart the mayor and intimidate other members of the town council into giving him the position. As sheriff, Boss and Amos keep the peace and enforce several "Black Laws" such as issuing fines or periods in jail for calling either of them a "nigger" in public. In his duties Boss meets Miss Pruit (Barbara Leigh), a white schoolteacher, who initially offends Boss by talking of the fond memories she has of her family's black slaves, but earns his forgiveness and develops a romantic interest in him. When a gang of Jed Clayton's men meet the mayor in the town saloon to extort supplies from the town (an arrangement that the mayor allows on the understanding that the gang will do no harm to the town or its citizens), Boss and Amos kill one gang member and arrest two more - with one prisoner being killed as he attempts to escape town assisted by the mayor.
