She appeared as a minor role in the 1997 comedy film Spicy Love Soup, directed by Zhang Yang. While in 2000, she starred in an advertisement for Qing Zui (fresh mouth) mint during CCTV's broadcast of the Sydney 2000 Olympic Games, and is thus known to viewers as "fresh mouth girl".
In 2002, she played the leading role of Zhou Zhiruo in The Heaven Sword and Dragon Saber, a television series adapted from Louis Cha's novel of the same title. Increasingly well known in Asia, Gao has also made inroads into the international market. In 2005, she was on the red carpet at the 58th Cannes Film Festival, where her film Shanghai Dreams, directed by Wang Xiaoshuai, won the Prix de Jury prize. Jackie Chan has described her as "having the freshest look and chaste spirit that no Hong Kong actress could approach". Chan also picked Gao up as his partner in the action comedy film Rob-B-Hood.
Gao was also selected in 2008 to be a torch bearer in the Nanjing leg of the torch relay for the 2008 Summer Olympics on 27 May.
From 2007 to 2008, Gao starred as Jiang Shuyun in City of Life and Death, a fictional account of events during the Nanjing Massacre. The film won the top prize at the 2009 San Sebastian Film Festival. Moreover, Gao became FIYTA's Brand Ambassador in 2011 and took a series of street snaps in Milan Fashion Week by wearing FIYTA watches.

Chi-yan (Gao Yuanyuan) is an analyst who just broke up with her boyfriend (Terence Yin) as he was having a baby with another woman (Selena Li). Sean (Louis Koo), a CEO of a broker firm, knew Chi-yan as her office is just opposite of his. He liked Chi-yan all the while, but knew that she was in a relationship and did not want to interfere, and started to take action as he saw what happened in the bus between Chi-yan, her ex, and his current wife. However, Kevin (Daniel Wu), an architect, who dressed shabbily, and an alcoholic, helped Chi-yan out when she was heartbroken by her ex. With Chi Yan's support and, Kevin decided to pick up designing again, and dated her to meet up again a week later. Chi-yan totally forgot about it as she was starting out with Sean, but it did not work out as Sean had a one-night stand with Angelina which started with a misunderstanding and ended his relationship with Chi-yan. Sean later shifted his office as the economy crisis caused him to lose a big sum of money and went over to US. Three years later, Sean comes back into her life as her boss. Ocean Heaven is about a terminally ill father, Sam Wong (Jet Li) as he works his job in an aquarium and struggles to look after his 21-year-old son Dafu, who has autism (Asperger's Syndrome) (Wen Zhang).
