A fake psychic, Blanche Tyler (Barbara Harris), and her boyfriend, George Lumley (Bruce Dern), attempt to locate the nephew of a wealthy and guilt-ridden elderly woman, Julia Rainbird (Cathleen Nesbitt). Chicago Examiner reporter Hildebrand "Hildy" Johnson (Jack Lemmon) has just quit his job in order to marry Peggy Grant (Susan Sarandon) and start a new career, when convict Earl Williams (Austin Pendleton) escapes from death row just prior to his execution. In 1913 Texas, Pike Bishop (William Holden), the leader of a gang of aging outlaws, is seeking retirement with one final score: the robbery of a railroad office containing a cache of silver. They are ambushed by Pike's former partner, Deke Thornton (Robert Ryan), who is leading a posse of bounty hunters hired and deputized by the railroad. A bloody shootout kills several of the gang. In 1996, psychopathic career criminal Simon Phoenix kidnaps a number of hostages and takes refuge with his gang in an abandoned building. LAPD Sgt. John Spartan uses a thermal scan of the building and finds no trace of the hostages, and leads an unauthorized assault to capture Phoenix. When he is captured, Phoenix sets off a series of explosives that bring down the building, and when the police search the wreckage, they find the corpses of the hostages. Spartan is charged with manslaughter, and he is incarcerated along with Phoenix in the city's new "California Cryo-Penitentiary", where they will be cryogenically frozen. During their time "in deep freeze", they are to be rehabilitated through subconscious conditioning.

Luke Skywalker initiates a plan to rescue Han Solo from the crime lord Jabba the Hutt with the help of Princess Leia, Lando Calrissian, Chewbacca, C-3PO, and R2-D2. Leia infiltrates Jabba's palace on Tatooine disguised as a bounty hunter with Chewbacca as her prisoner. Lando is already there disguised as a guard. Leia releases Han from his carbonite prison, but she is captured and enslaved. Luke arrives soon afterward but after a tense standoff, he is captured. After Luke survives his battle with Jabba's Rancor, Jabba sentences him and Han to death by feeding them to the Sarlacc. Luke frees himself and battles Jabba's guards. During the chaos, Boba Fett, who has remained at Jabba's palace since delivering Han, attempts to attack Luke, but Han inadvertently knocks him into the Sarlacc pit. Meanwhile, Leia strangles Jabba to death, and Luke destroys Jabba's sail barge as the group escapes. While the others rendezvous with the Rebel Alliance, Luke returns to Dagobah where he finds that Yoda is dying. Before he dies, Yoda confirms that Darth Vader, once known as Anakin Skywalker, is Luke's father, and there is "another Skywalker". The spirit of Obi-Wan Kenobi confirms that this other Skywalker is Luke's twin sister, Leia. Obi-Wan tells Luke that he must fight Vader again to defeat the Empire.

The film, set over the course of four consecutive New Year's Eves from 1964 to 1967, depicts scenes from each of these years, intertwined with one another as though events happen simultaneously. The audience is protected from confusion by the use of a distinct cinematic style for each section. For example, the 1966 sequences echo the movie of Woodstock using split screens and multiple angles of the same event simultaneously on screen, the 1965 sequences (set in Vietnam) shot hand-held on grainy super 16 mm film designed to resemble war reporters' footage. The film attempts to memorialize the 1960s with sequences that recreate the sense and style of those days with references to Haight-Ashbury, the campus peace movement, the beginnings of the modern woman's liberation movement and the accompanying social revolt. One character burned his draft card, showing a younger audience what so many Americans had done on the television news ten years before the movie's release. Other characters are shown frantically disposing of their marijuana before a traffic stop as a police officer pulls them over, and another scene shows the police brutality with billy clubs during an anti-Vietnam protest.
