César Faz (Clifton Collins, Jr.), moves to Monterrey, Mexico after he is let go by the St. Louis Cardinals from his job as a clubhouse attendant. There he meets local children being led by Padre Esteban (Cheech Marin), enjoying baseball; he takes pitcher Ángel Macías (Jake T. Austin), under his wing and brags about his own pitching skills and how he used to coach the Cardinals. Ángel convinces César to help recruit and coach Monterrey's first-ever Little League team. Set in Mexico during the 1850s, the film tells the story of Sara Sandoval (Salma Hayek) and María Álvarez (Penélope Cruz). María is an uneducated, poor farm-girl whose caring father is being forced off his land by a cruel U.S. land baron, named Tyler Jackson (Dwight Yoakam). Sara is the highly educated, wealthy daughter of the arrogant owner of the nearby properties, and has recently returned from Europe where she attended numerous grade schools and colleges in England, Spain, and France for several years. In one fell swoop, both María's and Sara's fathers fall under attack by the baron, (Sara's father is killed, María's is shot but survives) giving him free rein in the nearby territories. As an act of revenge, María and Sara team up to become bank robbers, stealing and giving back to the poor Mexicans who had lost their lands.

Starting in a small section of the near South, both U.S. Army Captain James West and U.S. Marshal Artemus Gordon hunt for Confederate General "Bloodbath" McGrath, who is wanted for mass murder. It points back to when McGrath ordered a massacre in a settlement called New Liberty, where many of the freed slaves were murdered, including West's biological parents. The search leads to a brothel where the two try (unsuccessfully) to arrest him. It leads to a huge brawl and a cart of nytroglycerin crashing into the building that starts a fire. Both West and Gordon, the latter dressed as a woman, escape.

A suicidal Hunter "Patch" Adams (Robin Williams) commits himself into a mental institution. Once there, he finds that using humor to help his fellow patients gives him a purpose in life. Because of this he wants to become a medical doctor and two years later enrolls at the Medical College of Virginia (now known as VCU School of Medicine) as the oldest first year student. He questions the school's soulless approach to medical care and clashes with the school's Dean Walcott (Bob Gunton), who believes that doctors must treat patients as patients and not bond with them as people. Because of this and incidents such as setting up a giant pair of legs during an obstetric conference, he is expelled from the medical school, although he is later reinstated due to his methods actually helping patients improve. Adams encourages medical students to work closely with nurses, learn interviewing skills early, and argues that death should be treated with dignity and sometimes even humor.

After stealing diamonds in a robbery, diamond thief Frank Warren is betrayed by his best friend Sam and his fiancée Noelle, who turns him into the authorities. Frank is sentenced to 12 years imprisonment at Camp Holliday, an experimental prison where each convict is given an electronic collar containing an explosive device which is electronically connected to another inmate. If any inmate tries to escape from Camp Holliday and is separated from the collar-mate by more than 100 yards, their collars will explode. Frank learns the inmate he is connected to is Tracey Rigg and Tracey and Frank both escape with their collars intact. On the run from the authorities, Tracey and Frank find they are being pursued by Sam and Noelle, believing Frank will lead them to the diamonds, which he has hidden.
