Not Quite Hollywood documents the revival of Australian cinema during the Australian New Wave of the 1970s and '80s through B-movies including Alvin Purple, Barry McKenzie Holds His Own, Dead-End Drive In, Long Weekend, Mad Max, The Man from Hong Kong, Patrick, Razorback, Road Games, Stork and Turkey Shoot. From 1971 through to the late 1980s, Australian directors began to take advantage of the newly introduced R-rating which allowed more on-screen nudity, sex and violence for audiences restricted to age 18 and over. "Ozploitation"—writer-director Mark Hartley's own portmanteau of "Australian exploitation"—was a subgenre of the New Wave which accounted for the critically panned "gross-out comedies, sex romps, action and road movies, teen films, westerns, thrillers and horror films" of the era, commonly overlooked in Australia's "official film history". The film addresses three main categories of "Ozploitation" films: sex, horror and action.

Peter and Carla have a wasted marriage and constant friction. Peter buys expensive camping gear and, despite the protests of Carla, insists they travel with their dog Cricket to camp on the isolated Moondah Beach in the North Coast with his friend Luke and his girlfriend during the rainy holiday. Peter stops in a pub at the Eggleston Hotel and leaves a message for Luke with the owner of the pub. When Peter takes what he believes to be shortcut to the beach, he gets lost and the couple spends the night sleeping in their SUV. The next morning, Peter organizes the campsite and their intrusion into and abuse of the natural environment begins. During the two days, the couple's relationship deteriorates while the nature avenges the bad treatment the couple has inflicted upon it.

Rob and Pia are a young couple who travel out for a day of sailing along coastal marshland. They become lost in a heavy storm and end up on a desolate island. They come across a decrpid old house and nearby barn with no one home. There is a large amount of marijuana growing in the barn that suggests the homeowners may not welcome their presence. There is also no telephone or means of communication with the outside world. But when the deranged, redneck owners—Brett, his brother Jimmy, and their even more terrifying father Poppy—return, Rob and Pia realize a fear far beyond anything they have ever known. Resentful of the affluent intruders, the three monstrously sadistic hillbillies imprison and enslave the couple, who—fearing for their lives—submit to appalling degradation and humiliation. When Rob and Pia learn their kidnappers have no intention of ever letting them go alive, they finally understand they must do whatever it takes to survive, and whatever it takes means going to a limit they could never have imagined which leads to the violent climax and ending; they will have to kill all three of the hillbillies by themselves in order to escape and survive.

At a junior high school dance in 1988, outcast student Jeremy Melton asks four popular girls to dance. Three girls, Shelley, Lily and Paige reject him cruelly; while the fourth girl, Kate, kindly turns down his offer. Their overweight friend Dorothy accepts Jeremy's invitation and they proceed to secretly make out underneath the bleachers. When a group of school bullies discover the pair, Dorothy 'claims' that Jeremy sexually assaulted her, causing the boys to publicly strip and severely beat him up, and his nose drips blood. Later in the film, Paige reveals Jeremy was sent to a reform school as punishment for his alleged "assault".

At a gas station, Michelle Mancini (Natasha Gregson Wagner) fights off an apparent attack by a stuttering attendant (Brad Dourif). However, he was actually trying to warn her of an attacker in the back seat, and as Michelle drives off, the attacker in the back seat decapitates her with an axe. On a college campus, student Parker Riley (Michael Rosenbaum) relates how one of the campus halls, Stanley Hall, had been the site of a massacre in 1973. The story is discredited by school journalist Paul Gardner (Jared Leto).

After receiving a distress signal, a team of elite commandos are dispatched to extract a scientific team in a secret military base. The team is instructed to shoot on sight any prisoners that they see. When they arrive, the commandos split into three teams. However, team leader Romeo (Ditch Davey) disobeys orders when he recognizes one of the prisoners, Eve (Amber Clayton), as his dead wife. Confused, Romeo asks how this is possible, but Eve claims to be suffering from amnesia and can only remember bits and pieces of her life. The others dispute this and want to kill her, but Romeo is adamant that she accompany them. After an encounter with a mutant gorilla, Elvis (John Brumpton) is killed and tensions begin to rise; the team begin to wonder what kind of experiments could have been performed at the base.
