A group of Confederate guerillas are trying to raid the Union Army, very late in the American Civil War. The southerners are ambushed, but thanks to the sharp-shooting of Frank James (Gabriel Macht) and the distracting and at the same time clever antics of Jesse James (Collin Farrell), the guerillas manages to survive & pull through. The James brothers, along with their war buddies, the Younger brothers, congratulate themselves, but (during the ride to reconnect with their unit) are surprised to learn that their army has pulled out, General Robert E. Lee had surrendered the previous day at Appomattox, and the war is over. The group decides to return home to their families and farms.

Jewel thief Miles Logan (Martin Lawrence) participates in a $17 million diamond heist in Los Angeles. One accomplice, Deacon (Peter Greene), wants the diamond all for himself, killing one member of the team[eddie], and Logan escapes to a nearby construction site, hiding the diamond in a vent as the police close in. Deacon escapes, while Logan is caught and arrested as a robber, spending two years in jail. Upon his release, he argues with his ex-girlfriend, Janiece (Tamala Jones), who is angry for him lying to her about being a banker. Professor Philip Brainard (Robin Williams) of Medfield College is developing a new energy source, in an attempt to raise enough money to save the college from closure. His preoccupation with his research distracts him from his fiancée, the college president Sara Jean Reynolds (Marcia Gay Harden). He has missed two weddings because of that preoccupation, much to Sara's anger. On the day of the third attempted wedding, Philip is approached by his former partner Wilson Croft (Christopher McDonald), who has profited from ideas he has stolen from the chemist and now desires to steal Sara from Philip and make her his wife, which he declares directly to Philip. Before he can make it to the wedding, his latest experiment shows fast development, forcing him to miss another wedding. The resulting substance created from the experiment is a green goo that increases in speed as it bounces and proves to be difficult to control, wreaking havoc on the neighborhood before the professor finally manages to capture it. Weebo (voiced by Jodi Benson), Philip's hovering robot assistant, classifies the substance as "flying rubber", leading Philip to christen it as "Flubber".

When Cole's Department Store's Santa Claus gets drunk before taking part in the Thanksgiving parade, Dorey Walker (Elizabeth Perkins), Cole's director of special events, fires him and must find a replacement immediately. She spots an old man (Richard Attenborough) berating the inebriated Santa, and begs him to take over. He introduces himself as Kris Kringle. Kris does so well during the parade that he is immediately hired to be Cole's main Santa for the holiday period. All the children in New York begin to believe that he is the real Santa, with the exception of Dorey's six-year-old daughter Susan (Mara Wilson). Dorey's boyfriend, Bryan Bedford (Dylan McDermott), does his best to convince Susan to believe. While being babysat one night by Kris, Susan shares with him her Christmas wish, she would like a dad, a house (used every year for the Cole's catalogue photoshoot) and a baby brother. Kris asks if she would begin to believe in Santa if she got all those things. Susan agrees that she would.

The film begins on Halloween night 1939, revolving around the fate of five people - singer Carolyn Crosson, her boyfriend Gilbert London, child actress Sally Shine (who is modeled after child actress, Shirley Temple), her nanny Emeline Partridge, and bellhop Dewey Todd. They were invited to be at the Tip Top Party located on the hotel's twelfth floor. The elevator suddenly got stuck at the eleventh floor, then at exactly 8:05 pm, lightning strikes the building which causes the elevator to collapse, and the five people mysteriously vanish.

The title is derived from the source material for Apocalypse Now, the Joseph Conrad novella Heart of Darkness. Using behind-the-scenes footage, and narrated by Eleanor Coppola, it chronicles how production problems including bad weather, actors' health and other issues delayed the film, increasing costs and nearly destroying the life and career of Francis Ford Coppola. In 1990, Eleanor Coppola turned her material over to two young filmmakers, George Hickenlooper and Fax Bahr (co-creator of MADtv), who then shot new interviews with the original cast and crew and intercut them with her existing material.
