In Texas 1858, the Speck brothers, Ace and Dicky, drive black slaves on foot. Among the shackled slaves is Django, sold off and separated from his wife, Broomhilda von Shaft. The Speck brothers are stopped by Dr. King Schultz, a German ex-dentist and bounty hunter from Düsseldorf, Prussia. Schultz asks to buy one of the slaves; when he questions Django about his knowledge of the Brittle brothers, for whom Schultz is carrying a warrant, Ace becomes irritated and aims his shotgun at Schultz. Schultz quickly kills Ace and leaves Dicky at the mercy of the newly freed slaves, who shoot Dicky in the head.

In the 1990s, U.S. National Security Agency official Thomas Bryan Reynolds (Jon Voight) meets with congressman Phil Hammersley (R-NY) (Jason Robards) in a public park to discuss support for new counter-terrorism legislation the U.S. Congress is pushing that dramatically expands the surveillance powers of intelligence agencies on individuals and groups. Hammersley remains committed to blocking its passage, since he believes it would almost totally destroy the privacy of American citizens. Reynolds has his team murder Hammersley, spread heart pills over his car, place him in the car and push it in a lake to make it look like he had a heart attack. In the aftermath, they discover too late that wildlife researcher Daniel Zavits (Jason Lee) had a camera aimed in the woods at their location. Zavits inspects the footage, transfers the video to an innocuous video game disc and flees the apartment ahead of Reynolds's team.

Cole Trickle is a young racer from Glendale, California, with years of experience in open-wheel racing winning championships in the Indycar Series. His goal was to win the Indianapolis 500 but realises that "You can't win at Indy without a great car and my name isn't Andretti or Unser". He is recruited by Chevrolet dealership tycoon Tim Daland to race for his team in the NASCAR Winston Cup Series. Daland also convinces former crew chief and car builder Harry Hogge to come out of retirement and lead Cole's pit crew. After Trickle sets a fast time in a private test at Charlotte, Hogge builds him a new Chevrolet Lumina to drive in the Winston Cup, though the season has already started.

In 1991, the governments of the U.S. and China are on the verge of a major trade agreement, with the President of the United States due to visit China to seal the deal. The CIA learns that its agent Tom Bishop (Brad Pitt) has been captured trying to free a Briton, Elizabeth Hadley (Catherine McCormack), from a People's Liberation Army prison in Su Chou near Shanghai, China. In 2003, burnt-out ex-CIA officer and former U.S. Marine Corps Force Reconnaissance officer John Creasy (Denzel Washington) looks for work and reunites with old friend and comrade Paul Rayburn (Christopher Walken), who runs a security firm in Mexico. Because of the extremely high rate of kidnappings in Mexico City for ransom money, businessman Samuel Ramos (Marc Anthony) hires Creasy through Rayburn to guard his nine-year-old daughter "Pita" (Dakota Fanning), intending to keep him on for only a short period in order to renew his kidnap and ransom insurance on Pita. Creasy suffers from alcoholism, depression and severe guilt as a result of his past work as a counterinsurgency fighter and assassin, and so works for Samuel at a rate far below what his experience would command. At first Creasy distances himself socially from Pita, but the two soon develop a friendship, which allows Creasy to overcome his demons and to act as a mentor and surrogate father-figure to the girl.

Riggan Thomson (Michael Keaton) is a faded Hollywood actor best known for playing the superhero Birdman decades ago in a series of films. He is often tormented by the mocking, critical inner voice of Birdman, and frequently visualizes himself performing feats of levitation and telekinesis. The film opens with a quotation from Raymond Carver stating that the main fulfillment in life is related to having once been loved, then cuts to a dramatic atmospheric disturbance resembling a meteor descending in flames. The film then cuts to a surreal shot depicting Riggan as levitating in his stage room. Riggan hopes to reinvent his career by writing, directing, and starring in a Broadway production of a loosely based adaptation of Carver's short story "What We Talk About When We Talk About Love".

During Prohibition in 1930s, Al Capone (De Niro) has nearly the whole city of Chicago under his control and supplies illegal liquor. Bureau of Prohibition agent Eliot Ness (Costner) is assigned to stop Capone, but his first attempt at a liquor raid fails due to corrupt policemen tipping Capone off. He has a chance meeting with Irish-American veteran officer Jimmy Malone (Connery), who is fed up with the rampant corruption and offers to help Ness, suggesting that they find a man from the police academy who has not come under Capone's influence. They recruit Italian-American trainee George Stone (Andy García) for his superior marksmanship and intelligence. Joined by accountant Oscar Wallace (Charles Martin Smith), assigned to Ness from Washington, D.C., they conduct a successful raid on a Capone liquor cache and start to gain positive publicity, with the press dubbing them "The Untouchables." Capone later kills the henchman in charge of the cache as a warning to his other men.

Frank Cross (Bill Murray) is a successful but cynical television programming executive for the IBC network headquartered in New York City.
